Mmm.... Thanksgiving Leftovers

I hope you had a wonderful Thanksgiving. We had a great one. Thursday's meal came out great. (Only took me three years to get that down.) I purchased a large turkey, 23 pounds. The sixteen of us didn't even come close to finishing that bird. Quite honestly though, that was my intention. With turkeys being so cheap before Thanksgiving, my 23 pound bird cost $12, I can't pass on buying a large bird and feeding my family with the leftovers.

Of course, for a few meals, we were content to heat the leftovers up and repeat the feast, but come Sunday, there would have been mutiny in my home if I tried to serve yet another Thanksgiving meal. That is when it is time to get creative. Here are some of my favorite ways to serve leftover turkey (and other leftovers.)

Cranberry Turkey Sandwiches
My personal favorite, though the entire family does not agree, is to simply take a leftover roll, slather it in cranberry sauce, and load it with turkey.

Hot Turkey Sandwiches
An opened faced turkey sandwich served with mashed potatoes and everything covered in gravy.

Creamed Turkey Sandwiches
Cut up leftover turkey and mix with gravy for sandwiches. If you don't have left over gravy, mix the turkey with a white sauce or even with canned cream soup.

Turkey Pie
Mix turkey with gravy (or the other options above) and a bag of mixed vegetables. For pot pie line a casserole dish with pie crust, add the turkey mixture, and top with crust. For a shepherds pie put the turkey mixture in a casserole dish and top with mashed potatoes. For either, bake at 350 F until top is golden brown (about 1 hour.)

Stir Fry
Stir fry vegetables add turkey at the end. Serve with rice.

Turkey Noodle Soup
If you saved your turkey carcass, make broth by boiling the carcass. You may need to strain the broth. Then add noodles, carrots and turkey and simmer.

A Chicken Substitute
Make any of your favorite chicken recipes and substitute turkey for the chicken.

Freeze It
If you simply can not stand to look at the leftover turkey any longer let alone come up with yet another meal from it, freeze it. Put serving sizes in freezer bags or other containers, and take a break from the turkey meals until turkey sounds good again.
