A Quick Sugar Fix - No Bake Cookies

We do not keep many sweets in the house. That is by design, but every once in awhile we just crave something sweet. This usually happens to Tim and I immediately after we have put the kids to bed. We want to relax, and have a sweet little snack. At this point there is no time (or energy) to bake up a batch of cookies. We want instant gratification. That can only mean one thing; no bake cookies.

No Bake Cookies

2 cups sugar
1/4 cup milk
1 stick of butter

Mix together in a saucepan. Bring to boil. Boil at a full rolling for one minute. REmove pan from the stove.

1TB vanilla
1/2 cup peanut butter
3 cups of oatmeal

Add to the saucepan and mix well. Drop by spoonfuls onto wax paper. Allow to cool and set. You can also add 4 TB cocoa to make a chocolate no bake cookie. As much as I love chocolate, I like these cookies best without it. Using crunchy peanut butter also gives a nice texture.

I know I told you to let these cool and set up, but in the interest of complete honesty, I must admit that after making these, you will often find us standing at the counter, spoon in hand, eating up the cookies before they are set. They really are better after they set, and it really doesn't take very long, but like I said instant gratification for the sweet tooth is what we are after.

These cookies also make a great breakfast in the morning for mom. Just add a cup of coffee! Um... don't tell my kids that I said that!
